Zucchini with Vinegar and Garlic Bram



  • 8 large zucchinis
  • 300 grams of chopped of parsley
  • 3 tbsp Wadi Food olive oil
  • 6 garlic cloves – minced
  • 1 cup tomato juice
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 4 tbsp Wadi Food white vinegar
  • 4 tbsp Wadi Food tomato paste
  • 2 cups hot broth


  1. Cut the zucchini into even rings and then set aside.
  2. Cook the meat with olive oil in a large pan, then add the garlic and stir all well.
  3. Add the sauce and spices then stir the mixture quickly, and cool with cold vinegar.
  4. Add the tomato juice and leave to boil all on fire.
  5. Transfer the mixture to the oven, then add the zucchini and the broth and stir the bram to ensure that the fluid descends to the bottom.
  6. Bram is baked in medium heat oven for 30 minutes until it takes the golden color and then served with white rice.
